The dish is a great twist on a classic omelet, incorporating tender broccoli florets and savory parmesan cheese. Rich in protein from the eggs, calcium from the cheese, vitamins and fiber from the broccoli, it's a quick, easy, and nutritious meal option for any time of day!

Ingredients

  • 2 large eggs

  • ¼ cup grated Parmesan cheese

  • 1 teaspoon olive oil OR vegetable oil

  • ½ cup broccoli, chopped

  • 1 green onion, finely chopped (optional)


Preparation

  1. Wash hands thoroughly with soap and water before you begin cooking. Thoroughly wash all fresh produce.

  2. Whisk together the eggs and Parmesan cheese together in a small bowl.

  3. Heat oil in a medium nonstick frying pan over medium heat. Add broccoli and green onion (if using); cook, stirring frequently, until tender, about 5 minutes.

  4. Pour the eggs into the pan, without stirring. Cover the pan with lid and cook until the eggs are set, about 3 to 4 minutes. Eggs are fully cooked when they reach an internal temperature of 160˚ F.
