Garden Sloppy Joes are a fun, health twist on a classic comfort food. With a base of lean ground meat, protein-packed beans or cannellini beans and vitamin-rich veggies boost this dish’s nutritional value. Served on whole-grain buns, these Sloppy Joes are an awesome balanced meal that is perfect for a family dinner!

Ingredients
1 medium onion, diced
1 medium carrot, shredded or diced
1 medium green bell pepper, diced
1 can (8 ounces) tomato sauce
1 can (14.5 ounces) crushed whole tomatoes, no-salt-added
1 can (6.5 ounces) mushrooms, no-salt-added OR ½ pound
fresh mushrooms, chopped
1 tablespoon vegetable oil
¼ cup barbecue sauce
6 100% whole-grain buns
1 can (15.5 ounces) of red kidney beans or cannellini
beans, drained and rinsed
1 pound 90-95% lean ground meat (turkey, chicken, or beef)
Preparation
Wash hands thoroughly with soap and water before you begin cooking. Thoroughly wash all fresh produce. Be sure to re-wash hands after handling raw meat.
In a saucepan, add vegetable oil and sauté onions, carrots, green peppers, and ground meat over medium-high heat for 5 minutes.
Add beans, tomato sauce, crushed tomatoes, mushroom and barbecue sauce.
Bring to a boil, then reduce heat and simmer for 15 – 20 minutes or until thick, stirring occasionally. Ground meat is fully cooked when it reaches an internal temperature of 165˚ F.
Toast buns, spoon mixture over bun halves, top with the other bun half and enjoy!
