Zucchini noodles, or "zoodles," are a fantastic replacement for traditional noodles. Unlike regular pasta, zoodles are low in calories and carbohydrates, making them an excellent choice for those looking to manage their weight or reduce their carb intake. Packed with essential nutrients, including vitamins A and C, potassium, and antioxidants, zoodles support overall health and immune function, making this stir fry both a nutritious and flavorful!

Ingredients
2-3 medium zucchinis, spiralized or thinly sliced
2 medium bell peppers (red, yellow or green), thinly sliced
1 medium carrot, grated
1 cup broccoli florets
½ (20 ounce) can pineapple tidbits in 100% juice, drained
2 tablespoons vegetable or canola oil
2 tablespoon low-sodium soy sauce
¼ teaspoon garlic powder
¼ teaspoon ground ginger
¼ teaspoon salt
¼ teaspoon ground black pepper
2 tablespoons fresh green onions, chopped
¼ bag baked wonton strips (optional) - skip Wonton strips to make this gluten free.
Preparation
Wash hands thoroughly with soap and water before you begin cooking. Thoroughly wash all fresh produce.
Mix soy sauce, garlic powder, ginger, salt, and pepper in a small bowl.
Heat oil in a large electrical stove or skillet over high heat.
Add broccoli and carrots, cook for 4 minutes.
Add peppers, zucchinis, and pineapple tidbits, cook for 1 minute stirring constantly.
Add soy sauce mixture to vegetables and stir quickly for a few seconds to combine.
Cover, reduce heat to low, and steam for 2 minutes.
Add chopped green onions and baked wonton strips and serve!
