Asparagus is a vegetable that is packed with nutrients including fiber, folate, and vitamin A. Garlic gives the dish a unique flavor, but it also has added health benefits, too! Garlic contains powerful compounds that have been linked with anti-cancer activity. This dish is easy to make and can be added as a side to any meal!

Ingredients

  • 1 pound fresh asparagus (medium width)

  • 2 teaspoons olive oil

  • 2 cloves garlic, minced

  • Salt, to taste

  • Freshly ground black pepper, to taste

  • Lemon wedges, as garnish


Preparation

  1. Wash hands thoroughly with soap and water before you begin cooking. Thoroughly wash all fresh produce.


  2. Preheat oven to 500˚ F.


  3. Rinse asparagus and break off tough ends and mince garlic.


  4. In a shallow roasting pan, place asparagus and coat it with olive oil.


  5. Sprinkle with garlic, salt, and pepper, to taste.


  6. Roast uncovered for 6-10 minutes (depending on the width of the spears). Shake pan occasionally to mix. Serve with lemon wedges.
