A light, flavorful fish dish roasted gently with fennel, citrus, and herbs. Perfect for a healthy, refreshing dinner.

Ingredients
1 lb white fish (such as cod), cut into 4 portions
1 small fennel bulb, thinly sliced
1 orange, unpeeled, thinly sliced, seeds removed
1 lemon, unpeeled, thinly sliced, seeds removed
1 small jalapeño pepper, halved, seeded, and thinly sliced
4 sprigs fresh thyme
2 tablespoons olive oil
½ teaspoon salt
¼ teaspoon black pepper
Preparation
Wash hands thoroughly with soap and water before you begin cooking; be sure to re-wash hands after handling raw meat.
Preheat oven to 300°F.
Toss fennel, orange slices, lemon slices, and jalapeño in a 9x13-inch baking pan.
Lay cod pieces next to the citrus mixture. Scatter thyme sprigs over the fish. Drizzle with olive oil and sprinkle with salt and pepper.
Roast 25–30 minutes, until fish is opaque and cooked through.
Serve fish with the roasted fennel and citrus.
