Ingredients
5 cups raw spinach
¾ cup sliced strawberries
¾ cup blueberries
¾ cup dry quinoa (2½ cups cooked quinoa)
¼ cup olive oil
3 tablespoons red wine vinegar
¼ teaspoon salt
⅛ teaspoon pepper
5 tablespoons shredded parmesan cheese
Preparation
Wash hands thoroughly with soap and water before you begin cooking.
Prepare quinoa according to package instructions and place it in the fridge to cool.
Rinse spinach, strawberries, and blueberries under running water, dry thoroughly, and tear into bite-sized pieces.
Combine spinach with sliced strawberries, blueberries, and quinoa.
Mix olive oil, red wine vinegar, salt, and pepper in a jar with a lid. Shake vigorously.
Pour salad dressing over salad and mix thoroughly.
Add parmesan cheese, serve, and enjoy!
